What Is Isomalt?

Isomalt is a versatile, crystalline substance with many different uses and applications. It’s derived from sucrose and preferred by pastry and cake professionals for its stability and usability. Cooking of isomalt is time consuming and requires special equipment, knowledge and attention to detail. It can be very dangerous, as the isomalt when liquid can be over 400 degrees!

Is Isomalt Safe to Eat?

The Food and Drug Administration (FDA) has reviewed isomalt and declared it GRAS, or Generally Regarded as Safe. That designation means the substance has been approved by the FDA for its intended use as a food additive, similar to baking soda, sugar and corn syrup. Isomalt is made from sugar, tastes like sugar and has half the calories of sugar. It does not cause dental cavities and is the most popular sweetener in the world, behind sucrose/sugar. Isomalt has a low glycemic response, and therefore is used in many dietetic candies. Just like many high fiber foods, the consumption of isomalt in moderate amounts is well tolerated by most people. The manufacturer recommends ingesting no more than 50 grams of isomalt a day to avoid a laxative effect.

How Do You Store Isomalt Products?

Please understand this is a sugar product and is sensitive to heat / moisture / cold and must be handled with care. Cooked Isomalt, if exposed to humid conditions, will absorb moisture from the air and become sticky. The sticky surface will eventually dry out as humidity conditions change and this sticky layer will re-solidify. Once this happens, the Isomalt will first lose its shine, then become cloudy and eventually re-crystallize – which makes it unusable. The key to storing cooked Isomalt is to protect it from humidity. Never add water to your isomalt product as it will break it down. Keep dry, cool temperature but never warmer than room temperature. Your items will come sealed in a bag with a silica pac to absorb moisture. Please keep sealed until you need to use your custom isomalt piece.

Will They Ship Safely?


99% of the time the custom isomalt products are delivered perfectly! Bottles are insured against breaking in transit via USPS and wrapped with wax paper, bubble wrap and in ziplock bags individually to protect in shipping. In the event of breakage during shipping please bring to my attention immediately. Bottles are not warranted past delivery and it is up to you to handle / store correctly. No refunds can be given on these handcrafted custom creations.

Please note that due to the nature of sugar art some isomalt items may have waves / swirls / bubbles as this is a hand created bottle made from an edible, sensitive material. Colors may not be an exact match, as we create these one batch at a time.
